Chicken with Grape Tomatoes & Mushrooms Featuring Swanson Flavor Boost

It is amazing what broth can do for any recipe. Besides being a fantastic soup base, it is great to have on hand to do everything from creating tender meat to moist stuffing to flavorful mashed potatoes. Up until now I’ve mainly just used chicken or beef broth and always from the can or from bouillon. Now Swanson offers another option that comes in concentrated pouches with their Flavor Boost. Swanson Flavor Boost is 100% natural with no artificial flavors, colors, or preservatives, and no MSG added. You’ll find it in four varieties: Chicken, Beef, Vegetable and Seafood.


I’m excited to try it with seafood since I’ve never really considered a broth for my seafood dishes before now. But to test out Flavor Boost, I simply turned to the back of the box and was immediately drawn to the Chicken with Grape Tomatoes and Mushrooms recipe for the chicken flavor. It turned out delicious!

Chicken with Grape Tomatoes & Mushrooms

Ingredients

  • 2 tablespoons olive oil
  • 1 1/4 pounds skinless boneless chicken breast halves, cut into thin strips
  • 1 package 8 ounces sliced fresh mushrooms (about 2 1/4 cups)
  • 1 clove garlic minced
  • 1 pint grape tomatoes about 2 1/2 cups
  • 3 green onions cut into 1-inch pieces (about 1/3 cup)
  • 2 packets Swanson® Flavor Boost™ Concentrated Chicken Broth
  • 2 tablespoons water

Instructions

  1. Heat one tablespoon olive oil in a 12-inch skillet over medium-high heat. Add the chicken. Cook until golden brown, stirring often. Remove the chicken.
  2. Heat the remaining oil in the skillet over medium heat. Cook mushrooms until tender, stirring occasionally.
  3. Add garlic, tomatoes, and onions.
  4. Cook and stir for a minute.
  5. Add chicken back into the skillet.
  6. Stir in the Flavor Boost and water.
  7. Ccook until the chicken is cooked through.
  8. Serve with cooked pasta if desired.

Preparation was a snap and because the broth was concentrated, it created a wonderful sauce. The only downside to this recipe is it is best served over a bed of pasta or rice to extend the meal. Unfortunately not a lot of extra sauce is created and it tasted fantastic! If I make it again I think I’ll double the amount of Flavor Boost and water so I can mix it in with the pasta. Instead I served it over a bed of buttered spaghetti and I added some parmesan cheese. Still delicious and easy!

  3. This looks GOOOOD! I haven’t tried any of the new Flavor boost,the one for seafood would be my first choice.

  4. This looks really good. Was it overly salty? I’ve used the chicken ones before and wow-it was salty. I learned to use only part of the package then tasting and adding more rather than just using the whole thing. I’ll have to try the seafood.

  5. I have heard of these flavor boosters but have not had the chance to buy and use any of them yet. I didnt know they had 4 flavors- thats great. They will be great to help zazz up my homemade soups. The recipe you showed looks really good tho I would leave out the tomatoes for the kiddies
