Homemade Strawberry Rhubarb Sauce

Strawberry Rhubarb Sauce is one of the best ways to use fresh rhubarb! Nothing beats the combination of strawberries and rhubarb. The sweetness of the strawberries and tartness of the rhubarb make for the best fruit sauce! Use this as a topping for your favorite desserts, breakfast dishes or serve as a simple fruit compote.

It is that time of year and peak season!This past week I made a homemade strawberry rhubarb sauce that turned out amazing. All my kids devoured it and my oldest son enthusiastically gave it 10 out of 10 stars. If you have are blessed to have a lot of rhubarb to use up or you just went strawberry picking, this recipe is a great way to use your fresh fruit. Otherwise, here is a great tutorial for how to freeze rhubarb.

Fresh Chopped RhubarbStrawberry and Rhubarb Sauce Ingredients

To make this delicious rhubarb sauce, you’ll need the following simple ingredients:

  • fresh rhubarb (can use frozen)
  • fresh strawberries (can use frozen)
  • sugar
  • lemon juice
  • lemon zest

This recipe requires 5 cups of rhubarb and good amount of fresh strawberries, so this is ideal for using up larger amounts from your garden or farmer’s market.

How to Make Strawberry Rhubarb Sauce

I like to chop my fruit into approximately 1-inch pieces rather than dice it so that I get a more chunky strawberry rhubarb sauce. You can cut it slightly large for a fruit compote. If you find it is too chunky, mash the fruit with a potato masher as it is cooking to break it down even more or you can dice your fruit instead.

How to Make Strawberry Rhubarb SauceStart by adding your raw rhubarb, strawberries, lemon zest and sugar to a medium saucepan. Bring it to a boil over medium high heat, stirring often. Reduce the heat to medium low and simmer for 15 minutes. Be sure to often give it a good stir. Remove from heat and stir in lemon juice. Cool completely to room temperature before transferring to an airtight container. I like to store mine in mason jars for easy access. I don’t bother with canning it since rhubarb strawberry sauce doesn’t last long!

How to Serve Strawberry Rhubarb Sauce

Use this strawberry-rhubarb sauce to accompany sweet treats like pound cake, angel food cake, cheesecake or homemade ice cream. Serve it at breakfast with as a perfect topping for pancakes, waffles or french toast.  Use this sauce as a fruit layer in yogurt parfaits or stir it into some plain Greek yogurt.  You can also offer it over baked brie or with other savory dishes, like grilled chicken or pork!

Fresh Strawberry Rhubarb SauceThis sauce is sweet with just the right touch of tart and works great to pair with other sweet foods.  The sweetness of the strawberries act as a natural sweetener makes a delicious sauce. Isn’t this sauce such a pretty color? No food coloring required!

Homemade Strawberry Rhubarb Sauce

Strawberry rhubarb sauce is the best way to enjoy fresh rhubarb from the garden! With just a few simple ingredients, you can make this rhubarb sauce to enjoy as a topping for ice cream, cheesecake, waffles, pancakes and more!

Ingredients

  • 5 cups chopped fresh rhubarb
  • 3 cups sliced strawberries
  • 3 tablespoons lemon zest
  • 2 1/2 cups sugar
  • 1/2 cup fresh lemon juice

Instructions

  1. Bring rhubarb, strawberries, lemon zest and sugar to a boil over medium high heat, stirring frequently.
  2. Reduce heat to medium low.
  3. Cook additional 15 minutes, stirring often.
  4. Remove from heat. Stir in lemon juice.
  5. Cool completely. Store in mason jars or airtight container in refrigerator.
