Southwestern Rice Bowl {Recipe}

For the past few months I’ve been in a bit of a rut with food. Being uncomfortably pregnant and then with a newborn, suddenly cooking wasn’t something I had a lot of time to do.  Meal planning has gone almost out the window. I admire those women who still do it all but I’m not ashamed to say that plenty of things have been slacking here as we try to get into a routine with Wesley. Now that he is 8 weeks old he is still leaving me short on time during the day but giving me some much needed sleep at night. That has made me itching to get back into the kitchen.

One thing that hasn’t seemed to end with my pregnancy are cravings. I remembered a small shop that sold Mexican rice bowls near where I worked but closed down a few years ago. It didn’t take much to remind me of it and once I thought of it I knew I needed to create something like it at home. This really isn’t an exact recipe and more like some ideas for fixings on top of a bowl of rice.

Southwestern Rice Bowl

Have fun playing around with different toppings based on what is on hand or personal preferences!

Ingredients

  • 4 cups cooked brown or white rice
  • 1/2 pound cooked chicken or other meat cubed or shredded and heated
  • 1 can Green Giant Southwestern Style Corn heated
  • 1 cup shredded Monterrey jack cheese
  • 1 cup salsa
  • 1/3 cup shredded lettuce
  • 1/2 cup sour cream
  • 1/3 cup chopped green onion

Instructions

  1. Layer each of the ingredients above starting with rice and then adding meat, corn, cheese, salsa, lettuce, sour cream and green onion. Serve warm.

I had planned to purchase corn and black beans separately but when I spotted Green Giants Southwestern Style Corn I thought why? Might as well get both and the extra flavors that come along with it. I really do love this and the Mexican Style Corn as well. Both really kick up the corn a notch but in this case I was looking for black beans.

Have fun experimenting with different toppings. This is a great way to use what is available in your refrigerator! I love the idea of creating a rice bar, much like a taco bar, to allow your family to build their own to suite their tastes. We used brown rice and leftover rotisserie chicken to fill ours but use any meat that you enjoy or go meatless altogether.

  3. This is a delicious and interesting recipe for a Rice bowl. I like Mexican inspired foods, and this dish looks like something I would make because I like corn in anything. Looks easy to make!
