Chili Cheese Jalapeno Poppers: Low-Carb Game Day Appetizers

It is January and that means it is time for the playoffs!  Regardless of whether or not you are a football fan, most of us can get behind the delicious food options for tailgating.  The Vikings are my team and are the NFC North Division Champs (3rd seed). Skol! Since anything can and will happen during the playoffs, I’m treating this Sunday’s game special in case it is our final game of the season. When it comes to appetizers, these Chili Cheese Jalapeno Poppers have all the recipe requirements to make it on the game spread. Featuring spicy jalapeño, chili and melted cheese, it is a great low-carb game day appetizer.

If you happen to have some leftover chili like I did when I made these poppers, then this is a perfect way to use it up! If not, canned chili will do or consider offering chili as part of your game day menu.

Be sure to wear clean disposable gloves when removing the membranes and seeds of your peppers and avoid touching your eyes or face. Nobody has time for burned skin on game day, or any day for that matter!

Chili Cheese Jalapeno Poppers

Ingredients

  • 2/3 cup chili approx.
  • 1/2 cup shredded cheese I used KRAFT Shredded Mexican Style Four Cheese Blend
  • 10 large fresh jalapeño peppers
  • 1 tablespoon chopped fresh chives optional garnish

Instructions

  1. Heat oven to 350ºF.
  2. Wearing clean disposable gloves, slice peppers in half lengthwise. Fully scoop out membranes and seeds.
  3. Fill pepper halves with chili. Top with and shredded cheese.
  4. Place, filled sides up, in shallow foil-lined or lightly oiled pan.
  5. Bake 17 to 20 min. or until cheese is fully melted and bubbly.
  6. Cool slightly before removing from pan to serve.
  7. Sprinkle fresh chives over poppers, if desired.

Give these poppers a try. That way, everyone wins even if your team wasn’t so fortunate.

If you want to turn down the spice, you can boil your seeded pepper halves in water for a few minutes. The longer they boil, the milder they become. Alternatively, you can always use small sweet peppers to skip the heat! Here is a great recipe I made this fall for mini sweet pepper poppers that aren’t spicy but still offer great flavor!
