My in-laws moved back to our area last year after living in Texas for many years. It has given us a chance to have close family nearby, which is awesome. We’ve created some new traditions, including dinner at our house on Saturday night.  My in-laws have our boys over during the day so my husband and I can clean and run errands, and they can spend quality time with their grandchildren. Then we treat them to dinner at our place. Afterwards we play games and catch up. It is a lot of fun!

I was asked to put a spin on a favorite Ragú® recipe, Weeknight Skillet Lasagna and decided our Saturday night tradition would be the perfect time to try it out. Some sort of pasta is regularly served because everyone loves it! Since we were having guests, I knew that 6 servings would not be enough for everyone. I wasn’t sure how well the lasagna noodles would cook in the same size skillet with additional ingredients so I decided to go with penne pasta instead. My kids love penne, and I knew it would go over well. This skillet still has the flavor of lasagna but makes for a quick and easy dinner on your table in 30 minutes or less.

For sauce, I went with one that features our favorite flavors. If you haven’t tried this variety you should. Ragú® Chunky Tomato Garlic & Onion Sauce has a delicious taste your whole family will love.

Ingredients

  • 1 1/2 lb. bulk Italian sausage or hamburger
  • 1 jar 24 oz. Ragu® Sauce
  • 1 can 6 oz tomato paste with Italian herbs
  • 2/3 cup water
  • 1 box 1 lb. penne pasta
  • 1 cup part-skim ricotta cheese
  • 1 cup shredded low fat mozzarella cheese (about 4 oz.)

Instructions

  1. Cook penne according to box directions; drain.
  2. Meanwhile, brown sausage in 12-inch skillet over medium-high heat; drain.
  3. Stir in Sauce, tomato paste and water until well combined.
  4. Stir in cooked noodles. Simmer until heated through, approximately 5 minutes.
  5. Top pasta with spoonfuls of ricotta cheese, then sprinkle with mozzarella cheese. Simmer covered until cheeses are melted, about 5 minutes.
  6. Serve immediately.

This recipe really is as easy as it looks.

Easy Lasagna Skillet Step 1I like to quickly form my sausage into balls while my pan is heating up. I do this for almost every pasta recipe because I like bite sized pieces of sausage so you can really taste them. Just a personal preference.

Easy Lasagna Skillet Step 2By adding the tomato paste, I was able to add additional sauce without having to open a second jar. I knew I wouldn’t need the whole jar and wanted to avoid extra.

Easy Lasagna Skillet Step 3I made larger spoonfuls of ricotta because I knew some of my kids wouldn’t appreciate this cheese in a concentrated form. It worked great for those of us who love ricotta and left plenty of room for me to serve it without  for those who don’t.

Easy Lasagna Skillet Step 4This skillet was easy but a nice change of pace from traditional spaghetti and certainly quicker than traditional lasagna.

Easy Skillet Lasagna RecipeI was enjoying my meal so much, I almost forgot to snap a picture. Dinner time was pretty much #Saucesome. The kids were their usual silly selves and we enjoyed a great dish over some fun conversation. I loved that I didn’t have to spend a long time in the kitchen to prepare a delicious meal.

Ragu Saucesome Dinner TimeAfterwards we played dominoes which has become our new family favorite for Saturday nights. Wesley wants to play too, but chicken foot with double nine dominoes is a bit tricky for him, so he played with his fruit dominoes next to us while his brothers watched a movie. Game night is #Saucesome and has become something we look forward to every week!
