Peanut Butter & Jelly Muffins

  • 2 cups flour
  • ½ cup sugar
  • ½ brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup creamy peanut butter
  • 1 large egg
  • 1¼ cup milk
  • jelly or jam or preserves of choice
  1. Preheat oven to 350 degrees. In large bowl, stir together flour, sugars, baking powder and salt.
  2. Add in peanut butter with a pastry blender or two forks until mixed and crumbles are formed.
  3. Whisk together egg and milk and add to dry ingredients.
  4. Stir just until moistened.
  5. Place a spoonful of batter into each of 14 greased or paper lined muffin cups.
  6. Spoon a teaspoon of jelly in the center of the half filled muffin tins.
  7. Top each muffin cup with the remaining peanut butter batter, fulling covering the jam layer.
  8. Bake for 20-35 minutes or until full cooked.
  9. Let sit in pan for a few minutes before transferring to a wire rack. Serve warm if desired.
