Cranberry Orange Protein Clusters

  • 2 cups Cheerios Protein Cinnamon and Almond
  • 1 cup flour
  • ⅓ cup flaxseed
  • ⅔ cup dried cranberries
  • ½ teaspoon cinnamon
  • ¼ cup brown sugar
  • ½ teaspoon salt
  • ⅓ cup coconut oil (in liquid form)
  • ½ cup honey
  • 1½ teaspoons orange extract (or 3 tablespoons orange zest)
  • 1 egg, beaten
  1. Preheat oven to 350 degrees F. Spray mini muffin tin with cooking spray.
  2. In large bowl, mix cereal, flour, flaxseed, dried cranberries, brown sugar, cinnamon and salt together. Create hole in center of mixture and pour in coconut oil, honey, orange extract and egg. Mix until completely combined.
  3. Drop into mini muffin tin and bake until a light golden brown, approximately 16-18 minutes.
  4. Cool for 5 mins. Move to wire rack to cool completely.
