Chocolate Chip Banana Cake | Mini Chef Mondays

Serves: 12 servings
- ½ cup shortening
- ⅔ packed brown sugar
- ⅔ cup sugar
- 2 eggs
- 1 cup mashed ripe bananas (2 to 3 medium)
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- ½ cup buttermilk
- ½ chocolate chips
- powdered sugar for garnish (if desired)
- In a large bowl, beat shortening and sugars until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Mix in bananas and vanilla.
- In separate bowl, combine flour, baking soda and salt.
- Gradually add to the creamed mixture alternately with buttermilk and beating well after each addition. Stir in chocolate chips.
- Pour into a greased 13-in. x 9-in. baking pan.
- Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
- Sprinkle with powdered sugar before serving (if desired)
