Watermelon Mint Salad with Feta (or without)

Serves: 8 servings
  • 6 cups cubed seedless watermelon
  • 1 cup blueberries
  • ⅓ cup fresh mint leaves, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons fresh lime juice (1 lime)
  • 2 teaspoons lime zest
  • salt and pepper to taste
  • ½ cup feta crumbles (optional)
  • fresh mint for garnish (optional)
  1. Place watermelon and blueberries in large bowl.
  2. Zest and juice one lime.
  3. In small bowl whisk oil, vinegar, lime juice, chopped mint and salad and pepper to taste.
  4. Pour over watermelon and toss to coat.
  5. Refrigerate until ready to serve.
  6. Sprinkle feta over top, just before serving.
  7. Garnish with fresh mint, if desired.
