Baked Caprese Chicken Recipe

  • 4 boneless, skinless chicken breasts,
  • 2 cans (10 oz) Salad Ready Tomato Wedges in Olive Oil and Italian Spices, drained
  • ¼ cup chopped onion
  • ⅛ cup brown sugar
  • 1½ teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground pepper
  • 4 cloves minced garlic
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1½ cups freshly shredded mozzarella cheese
  • fresh basil, chopped for garnish (optional)
  1. Preheat oven to 425 degrees F.
  2. Pound chicken breasts with meat tenderizer to an even thickness.
  3. Place chicken breasts in large baking dish.
  4. In a small bow,l stir together brown sugar, dried basil, oregano, salt, pepper and garlic to create dry rub.
  5. Drizzle chicken breasts with olive oil.
  6. Massage dry rub into both sides of chicken breast.
  7. Add canned tomatoes and onions around the sides of chicken.
  8. Drizzle balsamic vinegar over chicken and tomatoes.
  9. Bake for 16 to 20 minutes or until chicken is 160 to 165 degrees. (Will depend upon the thickness of chicken.)
  10. Sprinkle with shredded mozzarella.
  11. Broil for 3 to 5 minutes or until cheese is fully melted and bubbly.
  12. Garnish with fresh basil, if desired.
  13. Serve immediately.
