Pancake Mix Cookies with Oatmeal

Pancake Mix Cookies are an easy way to make a soft and chewy cookie that is full of flavor! Add oatmeal and raisins or chocolate chips for a cookie that is irresistible. With a few staple ingredients and some Bisquick you can have an amazing cookie. Trust me, it is hard to eat just one.
I just love variations for making classic recipes. There are so many fun ways to make cookies using mixes including brownie mix cookies, cake mix cookies or in this case pancake mix cookies! By using a mix you can typically skip several of the usual ingredients needed. In this case, no need to add flour, leveling agents or salt since all of that is included in the mix! If you need a gluten-free option, try these almond flour oatmeal cookies.
Pancake Mix Cookie Recipe Ingredients
To make these pancake mix cookies you’ll need the following ingredients:
- pancake mix (Bisquick Pancake and Baking Mix)
- old fashioned oats
- cinnamon
- nutmeg
- butter, softened
- brown sugar
- vanilla
- 1 egg
- 1 cup raisins or chocolate chips
Please keep in mind that this recipe was tested using Bisquick and not with other pancake mixes. While they should still turn out with a different brand, I can’t guarantee the same results. Bisquick is a great recipe base and can be used for a wide variety of recipes from sausage balls to peach cobbler with canned peaches!
How to Make Pancake Mix Cookies with Bisquick
It is pretty easy to make cookies with pancake mix. Start by preheating your oven to 350 degrees Fahrenheit.
In medium bowl, stir together your pancake mix (Bisquick in my case), oatmeal, cinnamon and nutmeg. Set aside.
Using a mixer, beat your softened butter and sugar in large bowl until light and fluffy. Mix in egg and vanilla. Add your pancake mix and oatmeal mixture and mix until fully combined. Stir in raisins or chocolate chips, whichever you prefer.
Line a cookie sheet with a silicone baking mat or parchment paper. Drop batter by tablespoons. You can make them slightly larger or smaller but try to keep them uniform in size for even baking.
Kitchen Tip: I love using silicone baking mats for all my cookie recipes. I like that they are reusable and they produce perfect cookie bottoms every time! They are also very easy to clean. Parchment paper is a close second however. It makes cleanup fast since you can just throw it away but it is also a downside that it is not reusable. I recommend trying parchment paper sheets if you like using them for baking sheets. This allows them fit fit flat and stops the sides from curling up like they do with parchment paper on a roll. No matter which you choose, you will get a great cookie that is easy to remove!
Since these pancake mix cookies do not spread out much on their own, you’ll want to flatten each cookie slightly using the bottom of a glass.
Bake for 9 to 11 minutes or until edges are lightly brown. Cool for 2 minutes before transferring to a wire rack.
These oatmeal raisin cookies made with Bisquick are super flavorful and a little addicting to be honest.
