Pot of Gold Rainbow Rice Krispie Treats for St. Patrick’s Day

There is a pot of gold at the end of the rainbow with this cute St. Patrick’s Day treat! Using purchased Rice Krispie Cereal Treats means you can focus on the decorating. Featuring rainbow sour belts, gold confetti sprinkles, candy melts and fondant, this pot of gold rainbow dessert is a colorful way to celebrate St. Patrick’s Day!

This past fall I created these Christmas Tree Rice Krispie Treats using sour belt candies I received from Sour Power. The brand was generous and gave me a large box of assorted candy in order to try out more of their product line and allow me to be creative. So what to do with all this sour candy I have on hand? Besides letting my kids have fun eating them, I put together Grinch party favors. But I still haven’t made much of a dent in my Sour Power stash.
I received a few bags of rainbow sour belt candies. And these mini rainbow belts seemed perfect to use for a spring or St. Patrick’s Day food idea. I played around with a few different options before settling on a pot of gold at the end of the rainbow dessert. And because sometimes I prefer to just decorate instead of bake, I chose to put them on purchased Rice Krispie Treats. I love that they make for a flat and blank canvas which is why I create so many cereal treat party ideas.
Ingredients for Pot of Gold Rainbow Rice Krispie Treats
To make these fun no-bake St. Patrick’s Day treats, you’ll need the following ingredients and supplies:
- Rice Krispie Treats (either homemade or purchased)
- bright white candy melts
- oil (canola/vegetable oil or shortening)
- mini rainbow sour belt candies
- black fondant
- gold confetti sprinkles
- oval mini cutter (approximately 1 inch tall and 1 1/4 inch wide)
- fondant roller (optional)
- gold paper straws (optional)
How to Make St. Patrick’s Day Pot of Gold Treats
To make these festive treats, you’ll want to start off by having all of your ingredients handy. Unless you have help, you’ll want to assemble each one fully before moving onto the next since the candy melts set up fast. Follow the instructions on your fondant package for softening. (If you’ve never worked with it before, not to worry. Working with fondant is really a lot like working with clay).
After heating my fondant up for a bit in the microwave, I worked it pretty good in my hands so it was well combined. I rolled it out with my fondant roller to about 1/8 inch thick, using the purple ring as a guide. Next, I cut out 16 black pots using a mini oval cutter, about 1 1/4 inch wide. I used the largest oval my cutter out of this mini cutter set and I highly recommend it. So many fun options and the tin holds everything neatly in place for easy storage.
Note: You don’t have to use a fondant roller, but I find it is so much easier to work with than traditional rollers and helps get an even thickness. Worth spending a few bucks on it, in my opinion.
Once all your pots have been cut out, melt you your bright white candy melts in the microwave, stirring at regular intervals just until melted. Add a bit of oil or shortening for a smooth finish. With all of your supplies nearby, spread your candy melts over the top of your Rice Krispie Treat.
Immediately top with your fondant black pot at the bottom and add gold confetti sprinkles. You will need to add these carefully. If you get some in the wrong spot or you simply want to arrange them a different way, a toothpick works great to move around or remove your sprinkles.
Immediately add your mini rainbow sour belt at an angle over the gold sprinkles. I let mine hang out over the top of the cereal treat. Repeat this process until all your treats are decorated.
If you would like to add sticks to your treats, you can cut a gold paper straw in half and insert it into the center of the treat once they have fully set. You will want to make sure you put it down far enough so that your treat doesn’t tip over because of the weight of the sour belt if you plan to serve them upright.
You can also skip this step entirely. These pot of gold rainbow treats look cute with and without the gold straws!
Pot of Gold Rainbow Rice Krispie Treats for St. Patrick's Day
Ingredients
- 1 box 16 ct Kellogg's Rice Krispies Treats Crispy Marshmallow Squares 0.78 oz
- 1 cup bright white candy melts
- 1 teaspoon canola oil or shortening
- 3 oz black fondant16 mini sour rainbow belts
- gold confetti sprinkles
- oval mini cutter approx. 1 inch x 1 1/4 inch
- 8 gold straws optional
Instructions

Line large baking sheet with silicone baking sheet, parchment paper or aluminum foil. Set aside.

Soften fondant if necessary following package instructions and roll out to an even thickness. (Try not to make it super thick or very thin About 1/8th inch thick)

Press small oval metal cutter into fondant to make black pots. Gently remove fondant and smooth edges with fingers or food safe brush if necessary. Place on lined baking sheet. Set aside. Repeat to make a total of 16 pots.

Remove larger cereal treats from packaging.

Melt candy melts in microwave in intervals, stirring often, just until full melted. Stir in oil or shortening for a smooth consistency.

Carefully spread candy melts over top of a cereal treat with small metal spatula.

Immediately add black fondant pot to the bottom of cereal treat. Add gold confetti sprinkles to the top of the pot to mimic gold. Use a toothpick to move any sprinkles if necessary.

Add mini rainbow sour belts at an angle to the top.

Set aside on baking sheet to dry completely at room temperature. Repeat with remaining cereal treats.

Set aside to dry at room temperature.

If you would like them on a stick, cut paper straws in half and insert them into the bottom of the cereal treat so they reach halfway up.

Store in airtight container until ready to serve.
These St. Patrick’s Day treats can be served standing up straight or on a platter laying down. Either way they are sure to brighten anyone’s day! I hope you love making these fun treats as much as I did.
