Potato Soup with Cream Cheese

This potato soup with cream cheese is an easy way to achieve creamy soup with minimal effort! Top with additional cheese, bacon and green onion to make it just like a loaded potato. Who doesn’t love loaded potato soup? This is an easy dinner option and sure to be a hit with the whole family.
Soup is my favorite one pot meal. I love that you have minimal cleanup, a flexible serving time and leftovers tastes just as good as when you served it. Potato Soup Ingredients
To make this creamy potato soup with cream cheese, you’ll needed the following ingredients:
- chicken broth
- fresh potatoes (russet or Yukon Gold)
- onion
- fresh garlic
- pepper
- sea salt
- cream cheese
- bacon, crumbled (optional)
- green onion (optional
- shredded cheese (optional)
The optional ingredients depend upon whether or not you want your potato soup to be a loaded potato soup. The soup itself has a more mild flavor so I think the toppings are what make the soup so great. If you plan to forgo the baked potato toppings, I recommend adding in a couple of bay leaves in with the broth, using 1/2 teaspoon seasoning salt and/or a bit more garlic.
How to Make Potato Soup
Potato soup is very simple to make. You’ll want to start by peeling and cubing your potatoes. I always cut mine in half the long way, then cut them in half again the long way. Then I cut them horizontal to cube them. I cube my potatoes into bite sized pieces. If you go too small they disappear into the soup and I like to have nice sized chunks. It helps to really taste the potato!
In a stock pot you sauté your diced onion and garlic until softened and translucent over medium heat. Add chicken broth, cubed potatoes, salt and pepper. Boil over medium heat until potatoes are tender. Exact cook time will depend upon the size of your potatoes but this will take approximately 10 to 15 minutes.
Gently smash 1/2 of the potatoes with a potato masher, or large spoon. This will release the starch in the potatoes to thicken your soup.
Reduce heat to low and stir in cubed cream cheese until fully melted. It is really important you cut your cream cheese into smaller chunks so it melts easy.
The result is a super creamy potato soup with plenty of potato chunks.
You can serve it as is if preferred. Maybe add some freshly ground pepper, chives or parsley flakes to the top for some color. But I recommend serving with some crumbled bacon, diced green onion and shredded cheese to turn this easy potato soup into loaded baked potato soup. You can include other favorite baked potato toppings such as chives, sour cream or jalapenos if preferred.

Ingredients
- 4 cups chicken broth
- 8 cups peeled and cubed potatoes Russet or Yukon Gold (approximately 4 lbs)
- 1/2 cup diced onion
- 2 to 3 cloves garlic minced
- 1 teaspoon freshly ground pepper
- 1 teaspoon sea salt
- 8 oz. cream cheese softened and cut into small cubes
- 8 slices bacon crumbled (optional)
- 1/2 cup diced green onion (optional
- 1 1/2 cups shredded cheese optional
Instructions

In a large pot sauté onion and garlic until soften and translucent over medium heat. Add broth, potatoes, salt and pepper. Boil over medium heat until potatoes are tender, approximately 10 to 15 mins, depending on size.
