Roasted Mangoes and Blueberries with Walnuts

I love baking with fruits that are in season. For the past several weeks, I keep buying a box of fresh champagne mangoes from my local warehouse club. When they have had a chance to ripen properly they taste just like candy. While mangoes may be an intimidating fruit for some, they are easy to work with once you know when they are perfectly ripe and the proper way to cut them. I’ve been wanting to try different ways to use them, including roasting them with brown sugar. I recently made Roasted Mangoes and Blueberries with Walnuts dish to serve over ice cream!

Roasted Mangoes and Blueberries with Walnuts

I wanted to keep my mangoes larger so they wouldn’t completely break down when they were roasted. I cut my mangoes into slices and removed them from the peel with a spoon. If you aren’t sure how to cut a mango, check out this How to Cut a Mango post.

I added blueberries to my mangoes because I love this flavor combination and knew it would offer some beautiful colors.

I also included some chopped walnuts to add some extra flavor and more fiber and protein. You’ll find 4 grams of protein and 2 grams of fiber per ounce of walnuts!  Plus, walnuts are so versatile and a perfect complement to other whole foods for nutritious, tasty dishes.

Chopped California Walnuts

Did you know that not all nuts contain omega-3s and walnuts are the only nut to contain a significant amount of alpha-linolenic acid (ALA), the essential plant-based omega-3 fatty acid? In one ounce, there are 2.5 grams of ALA, which is more than five times the amount found in any other nut. I had no idea.

Roasted Mangoes and Blueberries with Walnuts

Ingredients

  • 4 fresh mangos peeled and sliced into strips
  • 1 cup fresh blueberries
  • 1/4 cup butter melted
  • 1/4 cup brown sugar
  • 1/2 cup chopped California walnuts

Instructions

  1. Preheat oven to 400 degrees
  2. Add mango slices and blueberries to baking dish.
  3. Sprinkle brown sugar over fruit.
  4. Pour melted butter over sugar. Top with chopped walnuts
  5. Bake uncovered for 40 minutes, stirring halfway.
  6. Serve warm with your favorite ice cream, whipped cream, yogurt, pancake or waffles!

These roasted mangoes and blueberries and walnuts have so much flavor! You can eat it plain, over yogurt, on pancakes or waffles. But my favorite way to enjoy it is with a scoop of ice cream!

I served mine warm in a waffle bowl with vanilla ice cream and added a few extra chopped walnuts to the top. I love desserts like this when the fruit starts to melt the ice cream. So good!

    I love all of the ingredients in this recipe. Mangos are so good in recipes and I want to make this for a fun Summer time treat.

    I never heard of roasting mangoes before, this looks scrumptious. I love it with the ice cream, I could see using it like chutney, as a fall dish, esp for holidays!
