Sausage Hash Brown Casserole Recipe

Last spring I shared this bacon egg bake and it was such a hit that I wanted to try it with crumbled pork sausage and fresh eggs instead. It did not disappoint! We love casseroles with hash browns, including hamburger hash brown casserole. So easy and delicious!

Sausage Hash Brown Casserole Ingredients

To make this sausage breakfast casserole, you will need the following ingredients:

  • fresh shredded hash brown potatoes
  • bulk pork sausage roll (Jimmy Dean)
  • eggs
  • milk
  • onion powder
  • garlic powder
  • salt
  • pepper
  • green onion, diced
  • Rotel Original (drained well)
  • finely shredded Mexican style cheese

I used Jimmy Dean bulk pork sausage because that is what I grew up on and have available locally. If you also love this style of sausage, I recommend trying these sausage bites as a warm appetizer! Rotel adds so much flavor to recipes like this taco casserole. Can I use frozen hash browns?

While I haven’t personally tested it, most egg bake recipes like this one use thawed frozen hash browns. You could substitute frozen if that is what you have on hand or prefer as long as you thaw them ahead of time. I like the ease of fresh hash browns. How to Make Sausage Hash Brown Breakfast Casserole

To start, brown your bulk pork sausage.  Once your sausage crumbles are fully cooked, drain it well.

In a medium bowl, whisk your eggs, milk, salt, pepper, onion powder and garlic powder. Now you are ready to assemble!

Spray cooking spray over your 13×9 inch baking dish and spread your hash browns evenly over the bottom, pushing down gently.

Sprinkle 1 and 1/2 cups shredded cheese over the top of your shredded hash browns.

Pour your egg and milk mixtures over the top.

Sprinkle your well drained Rotel, sausage crumbles and green onion over the top. Reserve 2 tablespoons of green onion for garnish, if desired. Note: If you want the sausage to stand out, you can reserve a little of that as well and add it after it has cooked for an hour,  once you’ve sprinkled the remaining cheese on top.

Sausage Hash Brown Egg Bake with Rotel

Cover with aluminum foil and bake for about an hour, or until egg is set. Sprinkle with remaining cheese. Cook for additional 5 to 10 minutes, or until the cheese is fully melted.

Sausage Egg Hash Brown Casserole Recipe

Sprinkle the remaining green onion over the top for a little color. Give your egg bake a chance to cool for 5 minutes before serving. It will be very hot!

Ingredients

  • 20 oz bag 20 oz fresh shredded hash brown potatoes
  • 12 oz bulk pork sausage roll (I used Jimmy Dean)
  • 10 eggs
  • 1 cup milk
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 stalks green onion diced approx 1/2 cup, divided
  • 10 oz can Rotel Original drained well (can also mild or hot)
  • 3 cups finely shredded Mexican style cheese

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 13 x 9 inch baking dish with cooking spray.

  2. In a medium skillet over medium heat, crumble and brown bulk sausage until fully cooked. Drain.

  3. Place the hash brown potatoes in the bottom of the baking dish evenly, pressing down gently. Top with half of the shredded cheese.

  4. In medium bowl, whisk eggs, milk, garlic powder, onion powder, salt and pepper.
  5. Pour over hash browns and cheese.
  6. Top with Rotel , sausage and green onion. (Set aside 2 tablespoons green onion for garnish, if desired.)

  7. Cover with aluminum foil.
  8. Bake in the preheated oven for 50 minutes to 1 hour, or until egg is fully set.

  9. Remove cover and top with remaining cheese.

  10. Cook additional 5 to 10 minutes or until cheese is melted and bubbly.
  11. Let stand for 5 minutes.
  12. Top with remaining green onion if desired before serving.

Can this egg bake be made in advance?

I have not yet tested this recipe to know if you can store it in the fridge overnight for the same results. However, you could easily cut down on most of the prep time by preparing your ingredients the day before and assembling it the following morning. If you cooked your sausage, cut your green onion and measured out your spices, you could easily have this assembled in the time it takes to preheat your oven.

Can I use this hash brown casserole for meal prep or leftovers?

Absolutely! Because this is a hearty casserole, my family of 5 has never finished it off in one sitting. The leftovers heat up great, making it an awesome meal prep recipe. It holds together well so you can easily bring it to work to heat up.
