You may remember my Fiesta Layer Dip which I entered in the beano Be Natural Virtual Cook-Off a couple of weeks ago. I’m happy to partner with beano on this campaign which promotes cooking with fresh but sometimes gas inducing ingredients. The top five finalists were chosen by a panel of judges, based off from scores received for such marks as photography, using natural ingredients and the gas potential.
Unfortunately my recipe was not one of the top 5 but that doesn’t mean you can’t enjoy my Fiesta Layer Dip during your next party. It would work fabulous any time of year for your next potluck or holiday get together. The cream cheese dip at the bottom may not get as many points for being natural but it does get extra points for being awesome. (Seriously, who doesn’t love cream cheese?) And the corn and black bean salsa layer can easily be made separately and served with tortilla chips alone or as a topping for fresh fish or other dishes like my Southwestern Rice Bowl. Yum!
Just be sure to have some beano handy so that gas doesn’t get to crash the party.
