LEMON  POKE CAKE

wHY mAKE A pOKE cAKE?

Poke cake is always a hit! By poking holes in your cake after baking and filling with Jello, pudding, ice cream toppings or other fillings, it creates a super moist and flavorful cake!

Cook Time: 25 Min

Ingredients

- white cake mix (15.25 oz) + plus ingredients to make cake - lemon Jello - water - lemon pie filling - COOL WHIP whipped topping - lemon slices (for garnish, optional)

Prepare cake and bake cake according to directions on the box for 13x9-inch pan. Cool 15 minutes in pan on wire rack.

Step 1

With handle of wooden spoon (1/4 to ½ inch in diameter), cookie stick or large fork,  poke holes every half inch.

Step 2

Mix Jello with boiling water until dissolved and add cold water. 

Step 3

Pour Jello mixture evenly over cake, making sure pour into the holes.

Step 4

Cover and refrigerate 1 to 2 hours.

Step 5

Top cake with lemon pie filling. 

Step 6

Add COOL WHIP whipped topping or homemade whipped cream if preferred. 

Step 7

Cover and store in refrigerator until ready to serve. Top each piece with quarter lemon slice (optional).

Step 8

This cake is perfect for potlucks, spring/summer gatherings or any holiday celebration including Thanksgiving, Christmas, Easter and Mother's Day!
