Raspberry Thumbprint Cookies

Thumbprint cookies are a classic cookie and great addition to your Christmas baking list!  This recipe features raspberry jam with icing drizzle but you can easily swap out the jam with your favorite variety or use multiple flavors.  Click over to the post for the full recipe and a side-by-side comparison for when to add jam to cookies!

– butter – sugar – egg – vanilla – flour – baking powder – salt – jam (I used raspberry) Icing (optional): – powdered sugar – vanilla extract – water

In medium bowl stir together flour, baking powder and salt. In large  bowl cream butter, 1/2 cup granulated sugar, and vanilla extract.  Add egg and beat well.  Gradually beat in flour mixture. Chill dough for one hour only.

Preheat oven to 350 degrees Fahrenheit. Roll dough into 1" balls. Roll balls into sugar and place 2" apart on baking sheets lined with parchment or silcone baking sheets

Using your thumb or rounded measuring spoon, make an indentation in the center of each ball. Bake  13-16 minutes or until the edges are slightly browned. Remove to wire racks.

Place jam in small bowl and melt in microwave. Spoon jam into baked cookies. Cool completely. (Click link to see other options for when to add the jam!)

Combine combine confectioners' sugar, extract and water until well mixed. Icing should be fairly thick. Drizzle over cookies.
