Peanut Butter and Jelly Mini Pancake Stacks

Kids will love these peanut butter and jelly mini pancakes stacks for school lunch! This quick and easy lunch recipe is perfect for any pb&j lover. Who says you can’t enjoy a classic breakfast and lunch at the same time?

Ingredients

  • 9 frozen mini pancakes, thawed purchased or homemade
  • 1 tablespoon Our Family Peanut Butter creamy or crunchy
  • 1 tablespoon Our Family Strawberry Preserves or your favorite jam or jelly
  • 3 fresh strawberries

Instructions

  1. Spread peanut butter on top of one mini pancake

  2. Add additional mini pancake and spread preserves on top.

  3. Top with an additional mini pancake.

  4. Push bamboo fork into fresh strawberry and skewer your mini pancake stack. Repeat process with remaining pancakes.

  5. Serve at room temperature.

Recipe Notes

You can substitute your favorite flavor of jam, jelly or preserves.

Bamboo forks work best but a toothpick or mini skewer can be used instead.
