Cranberry Walnut Bread

orange zest
from 1 medium orange

fresh cranberries
coarsely chopped

chopped walnuts

Preheat oven to 350 degrees Fahrenheit. Grease two 8x4 inch loaf pans. Set aside.
In large bowl, combine flour, sugar, baking powder, salt and cinnamon. Set aside.
In medium bowl, whisk together egg, milk, orange juice, orange zest and oil. Add to dry ingredients and stir until fully combined.
Fold in coarsely chopped fresh cranberries and 1 cup chopped walnuts.
Pour evenly into two loaf pans. Top with remaining 1/2 cup chopped walnuts.
Bake for 50 to 55 minutes or until golden brown and toothpick inserted in center comes out clean.
Cool 10 minutes before transferring to wire rack to cool completely.
These loaves can be wrapped and frozen. Thaw at room temperature.
