Ingredients

  • 1 box (6 oz) strawberry Jello gelatin (or raspberry or cherry)*
  • 1 cup boiling water
  • 2 cups unsweetened applesauce
  • 1 cup Sprite or 7-up soda chilled
  • 2 cups Cool Whip whipped topping thawed
  • 2 cups mini marshmallows
  • fresh strawberries for garnish optional

Instructions

  1. In large bowl add gelatin and pour in boiling water.
  2. Stir until dissolved, around two minutes.
  3. Whisk in applesauce until well combined. (I used a small milk frother)

  4. Pour in Sprite and give a slight stir. Transfer to a serving dish. (You'll want one that is 2 to 2.5 quarts ideally)

  5. Cover and chill until fully set, approximately 4 to 6 hours or overnight.

  6. Before serving, gently fold together whipped topping and mini marshmallows in a medium bowl.

  7. Top jello salad with whipped topping mixture and garnish with fresh strawberries, if desired.

  8. Cover and refrigerate any leftovers for up to 5 days.

Recipe Notes

*Can use two 3 oz boxes of jello instead of one 6 oz box of jello.

Other garnish options include chopped pecans or walnuts or fresh mint.

Can also use individual dishes instead of one large serving dish.

No lemon lime soda? Use one cup of cold water instead.
