Chicken Potato Fiesta Casserole

Ingredients

5 oz Betty Crocker® cheesy scalloped potatoes

boiling water

milk
2/3

shredded taco cheese
or your other favorite cheese combination
1/3

Old El Paso® Thick 'n Chunky salsa

cups
cooked chicken
broken up (leftover rotisserie or fried chicken works well)
sour cream and diced green onion for garnish

Instructions
Preheat oven to 400º F.
Whisk sauce mix and boiling water in 2-quart casserole until sauce mix is melted.
Whisk in milk
Stir in potatoes and remaining ingredients.
Bake uncovered approximately 35 minutes or until potatoes are tender.
Let stand 5 minutes before serving as the sauce will thicken as it stands.
Top with sour cream and green onion (if desired).
