Chicken with Grape Tomatoes & Mushrooms

Ingredients

  • 2 tablespoons olive oil
  • 1 1/4 pounds skinless boneless chicken breast halves, cut into thin strips
  • 1 package 8 ounces sliced fresh mushrooms (about 2 1/4 cups)
  • 1 clove garlic minced
  • 1 pint grape tomatoes about 2 1/2 cups
  • 3 green onions cut into 1-inch pieces (about 1/3 cup)
  • 2 packets Swanson® Flavor Boost™ Concentrated Chicken Broth
  • 2 tablespoons water

Instructions

  1. Heat one tablespoon olive oil in a 12-inch skillet over medium-high heat. Add the chicken. Cook until golden brown, stirring often. Remove the chicken.
  2. Heat the remaining oil in the skillet over medium heat. Cook mushrooms until tender, stirring occasionally.
  3. Add garlic, tomatoes, and onions.
  4. Cook and stir for a minute.
  5. Add chicken back into the skillet.
  6. Stir in the Flavor Boost and water.
  7. Ccook until the chicken is cooked through.
  8. Serve with cooked pasta if desired.
