Ingredients

  • 1/2 cup shortening
  • 2/3 packed brown sugar
  • 2/3 cup sugar
  • 2 eggs
  • 1 cup mashed ripe bananas 2 to 3 medium
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup buttermilk
  • 1/2 chocolate chips
  • powdered sugar for garnish if desired

Instructions

  1. In a large bowl, beat shortening and sugars until light and fluffy.
  2. Add eggs, one at a time, beating well after each addition.
  3. Mix in bananas and vanilla.
  4. In separate bowl, combine flour, baking soda and salt.
  5. Gradually add to the creamed mixture alternately with buttermilk and beating well after each addition. Stir in chocolate chips.
  6. Pour into a greased 13-in. x 9-in. baking pan.
  7. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
  8. Sprinkle with powdered sugar before serving (if desired)
