This cucumber radish salad is the perfect side dish for summer. It's refreshing, light, and easy to make. Everyone will love the creamy dill dressing. Plus, it's a great way to use up veggies from your garden or the farmer's market.
1teaspoondried dill weed or 1 tablespoon fresh dill
1/2teaspoongarlic powder
1/2teaspoonfreshly ground pepper
Instructions
Cut cucumbers into thin slices. Cut red onion into thin slices and cut in half. Add cucumbers and onion to large sieve and place over a bowl. Sprinkle salt over the top and stir well. Cover with plastic wrap and let sit for at least 30 minutes, stirring once halfway to get excess moisture out of cucumbers.*
Meanwhile, trim and slice radishes thinly using a knife or mandolin. Add to large bowl. Set aside.
In medium bowl, whisk together remaining ingredients (mayo, sour cream, red wine vinegar, sugar, fresh lemon juice, dill, garlic powder and fresh ground pepper). Set aside.
Turn over cucumbers and onion onto paper towel and pat dry well with paper towels to remove excess liquid.*
Add cucumbers and onion to radishes. Pour dressing over top and gently stir until well combined.
Cover and refrigerate. Best to serve within one to two hours. For best results, eat with 24 hours.**
Recipe Notes
*If you want to skip the step of getting some the water out of the cucumbers, I recommend cutting your vegetables and making your dressing ahead of time to let the flavors meld and then pouring the dressing over the vegetables just before serving.
**Cucumbers continue to release water as they sit in the dressing. Over time the dressing will thin out. It will still taste good but will get very watery so best to consume this salad within a day or within an hour if you like a very creamy dressing.
