
Cucumber Salmon Bites are a delicious finger food idea for your next party! This recipe features smoked salmon and cream cheese on a cucumber slice and it is a naturally low carb and gluten free appetizer. Serve it up as an elegant small bite for your next dinner party, wedding shower, holiday party or birthday celebration!
Beat softened cream cheese in medium bowl with mixer until creamy.
Mix in everything bagel seasoning and chopped parsley until fully combined.
Slice cucumber, approximately 1/3 inch thick. Exact number will depend upon size of cucumber but you want approximately 32 slices. Pat dry with a paper towel to remove any moisture.
Top each slice with 1 teaspoon of cream cheese mixture and small piece of smoked salmon. (I made small strips and rolled them before placing on top.)
Snip chives into even sized pieces, approximately 1 inch. Place two on each cucumber slice for garnish.
Serve immediately or cover and refrigerate. Best if served within a few hours of preparation.
Makes approximately 32 cucumber bites.
For best results, serve this recipe within a few hours of preparation since the cucumber will start to release some moisture. Can be enjoyed up to two days later.
