Ingredients

  • 8 oz package cream cheese softened
  • 1 1/2 tablespoons everything bagel seasoning
  • 2 tablespoons chopped fresh parsley
  • 1 large English Cucumber (or two small to medium)
  • 6 oz smoked salmon
  • fresh chives or fresh dill as garnish

Instructions

  1. Beat softened cream cheese in medium bowl with mixer until creamy.

  2. Mix in everything bagel seasoning and chopped parsley until fully combined.

  3. Slice cucumber, approximately 1/3 inch thick. Exact number will depend upon size of cucumber but you want approximately 32 slices. Pat dry with a paper towel to remove any moisture.

  4. Top each slice with 1 teaspoon of cream cheese mixture and small piece of smoked salmon. (I made small strips and rolled them before placing on top.)

  5. Snip chives into even sized pieces, approximately 1 inch. Place two on each cucumber slice for garnish.

  6. Serve immediately or cover and refrigerate. Best if served within a few hours of preparation.

Recipe Notes

Makes approximately 32 cucumber bites.

For best results, serve this recipe within a few hours of preparation since the cucumber will start to release some moisture.  Can be enjoyed up to two days later.

Don't have everything bagel seasoning? You can make your own with the following:

  • 1/2 teaspoon sesame seeds
  • 1/2 teaspoon poppy seeds
  • 1/4 teaspoon dried minced garlic
  • 1/4 teaspoon dried minced onion
  • 1/8 teaspoon coarse salt (or to taste)
  • a small pinch of black sesame seeds for color contrast (optional)
