Easy Slow Cooker Minestrone Soup

Ingredients

  • 8 cups chicken broth
  • 1 can 14.5 ounces Hunts Diced Tomatoes, undrained
  • 1 to 1 1/2 lbs. ham steak cubed
  • 1 can 15.5 ounces white kidney beans, rinsed and drained
  • 2 small to medium potatoes peeled and cubed
  • 1 small onion chopped
  • 2 small carrots chopped
  • 2 celery stalks chopped
  • 2 tablespoons finely chopped Italian parsley
  • 1 teaspoon minced garlic
  • sea salt and freshly ground pepper to taste
  • 2/3 cup ditalini shells or macaroni

Instructions

  1. Place all ingredients except for pasta in 5 quart (or larger) slow cooker.
  2. Cook on low for 8 hours or until potatoes are tender.
  3. Stir in pasta during last half hour of cooking.
  4. Garnish with fresh parsley and/or Parmesan cheese.
