Easy Stuffed Jalapeno Poppers

Ingredients

  • 16 large fresh jalapeño peppers
  • 1 can Ro*Tel Original Diced Tomatoes & Green Chilies
  • 2 8 oz packages cream cheese softened
  • 8 slices pre-cooked bacon chopped
  • 2 cups finely shredded Mexican four cheese blend divided

Instructions

  1. Heat oven to 350ºF.
  2. In medium bowl, beat cream cheese until smooth.
  3. Add in Ro*Tel (do not drain), chopped bacon and 1 cup shredded cheese.
  4. Mix until fully combined and set aside.
  5. Wearing clean disposable gloves, slice peppers in half lengthwise. Fully scoop out membranes and seeds.
  6. Fill pepper halves with cream cheese mixture.
  7. Place, filled sides up, in shallow foil-lined or lightly oiled pan.
  8. Top with remaining shredded cheese.
  9. Bake 17 to 20 min. or until cheese is fully melted and bubbly.
  10. Cool slightly before removing from pan to serve.
