Fiesta Layer Dip with Corn Black Bean Salsa

Ingredients

  • Corn & Black Bean Salsa:
  • 1 can 14 ounces, black beans, rinsed and drained
  • 2 cups frozen canned or fresh corn kernels
  • 1 small red bell pepper seeded and chopped
  • 1 small yellow bell pepper seeded and chopped
  • 1 cup chopped tomatoes seeded
  • 1/2 red onion chopped
  • 1/2 cup chopped fresh parsely
  • 1 teaspoon ground cumin
  • 1 lime juiced
  • 1 to 2 cloves garlic
  • Salt and pepper to taste
  • Dip Ingredients:
  • 8 oz cream cheese softened
  • 8 oz sour cream
  • 1 packet of taco seasoning
  • Additional Toppings
  • 3 cups shredded lettuce
  • 1 cup shredded cheddar cheese

Instructions

  1. In large bowl, gently toss all salsa ingredients together.
  2. In medium bowl, beat together cream cheese, sour cream and taco seasoning until well combined.
  3. Layer ingredients on large platter or bowl starting with cream cheese mixture, then salsa (drained), lettuce and then top with cheese.
  4. Serve immediately with tortilla chips and store leftovers in refrigerator.
  5. Yields approximately 12 cups
