Glazed Sweet Potatoes with Toasted Walnuts

Ingredients

  • 3 to 4 larger sweet potatoes
  • 2 tablespoons brown sugar
  • 1 tablespoon maple syrup
  • 1/4 teaspoon mustard powder
  • 1/4 teaspoon cayenne powder
  • 1/8 teaspoon cinnamon
  • salt and pepper
  • toasted walnuts if desired

Instructions

  1. Preheat oven to 400 degrees F.
  2. Wash sweet potatoes and place on baking tray without pricking or oiling the potatoes.
  3. Bake just until cooked, approximately 50 minutes. (You don't want to over cook them!) Cool.
  4. Peel sweet potatoes and cut into medium cubes.
  5. In large saute pan, heat remain ingredients (except salt and pepper) together to form a light caramel.
  6. Add potatoes and brown together. Season with salt and pepper and top with toasted nuts if desired. Serve with a drizzle of sauce.
