Ingredients

  • 2 lbs lean ground beef
  • 1 small yellow or white onion diced (approximately 1 cup)
  • 1 small green pepper diced (approximately 1 cup)
  • 1 can (10.5oz) condensed cream of mushroom soup
  • 1 can (15 oz) whole kernel corn, drained
  • 1 cup sour cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 20 oz bag fresh shredded hash browns (or frozen, thawed)
  • 3 cups shredded cheddar cheese (or colby jack or Mexican blend)
  • 2-3 tablespoons butter, melted (optional)
  • chopped green onion (for garnish, optional)

Instructions

  1. Preheat oven to 375°F.  Spray a 9X13 inch baking dish with non-stick cooking spray. 

  2. In a large skillet, brown the ground beef, onions and green pepper. Drain excess grease.

  3. Reduce the heat to medium-low. Stir in cream of mushroom soup, sour cream, corn, salt, pepper and garlic powder until mixed well into ground beef mixture.
  4. Transfer the ground beef mixture to the baking pan and spread evenly. Sprinkle with 1 cup of shredded cheese
  5. Add the hash browns evenly over the top of the cheese. Season with additional salt and pepper to taste.
  6. Brush with melted butter, if desired.
  7. Bake for approximately 45 minutes or until the hash browns are starting to brown on top.
  8. Remove from the oven and sprinkle the remaining 2 cups of shredded cheese on top.
  9. Return to the oven and cook approximately 5 minutes, or until cheese is melted. Let rest for 5 minutes.
  10. Sprinkle with green onion if desired before serving.

Recipe Notes

Can use frozen hash browns that have been thawed. Be sure to remove any excess liquid.

This casserole tastes great with additional sour cream, hot sauce, ketchup or salsa served on the side!
