This lemon poke cake is incredibly easy to make and tastes so good! The white cake mix features lemon jello and is topped with lemon pie filling and COOL WHIP the perfect finishing touch. If you are a lemon lover, you will love this simple cake! Perfect for any holiday including Easter or Mother's Day and makes a great dessert for potlucks, cookouts or any celebration.
1box (15.25 oz)white cake mix *plus ingredients to prepare
3large egg whites*
1/2 cup vegetable oil*
1cupwater*
Cake Filling and Topping
1box (3oz)lemon JELLO
1cupboiling water
1/2cupcold water
31/2 cupslemon pie filling**
1tub (8oz)COOL WHIP whipped topping, thawed
fresh lemon for garnishoptional
Instructions
Prepare cake and bake cake according to directions on the box for 13x9-inch pan.
Cool for 15 minutes in pan on wire rack.
With handle of wooden spoon (1/4 to ½ inch in diameter), cookie stick or large fork, poke holes every half inch.
In medium bowl, whisk boiling water and Jello. Once completely dissolved, add in cold water and stir. Pour evenly over cake, making sure to fill each of the holes.
Refrigerate 1 to 2 hours.
Top with 1 to two cans lemon pie filling, depending upon preferences.
Spread whipped topping evenly over cake.
Cover and store in refrigerator until ready to serve.
Top each piece with quarter lemon slice (optional)
Store any leftovers in refrigerator. Best if consumed within 5 days.
