Pot of Gold Rainbow Rice Krispie Treats for St. Patrick's Day

Ingredients

  • 1 box (16 ct) Kellogg's Rice Krispies Treats Crispy Marshmallow Squares 0.78 oz (or homemade Rice Krispie Treats)
  • 1 cup bright white candy melts
  • 1 teaspoon canola oil or shortening
  • 3 oz black fondant16 mini sour rainbow belts
  • gold confetti sprinkles
  • oval mini cutter approx. 1 inch x 1 1/4 inch
  • 8 gold straws optional

Instructions

  1. Line large baking sheet with silicone baking sheet, parchment paper or aluminum foil. Set aside.

  2. Soften fondant if necessary following package instructions and roll out to an even thickness. (Try not to make it super thick or very thin About 1/8th inch thick)
  3. Press small oval metal cutter into fondant to make black pots. Gently remove fondant and smooth edges with fingers or food safe brush if necessary. Place on lined baking sheet. Set aside. Repeat to make a total of 16 pots.
  4. Remove larger cereal treats from packaging.
  5. Melt candy melts in microwave in intervals, stirring often, just until full melted. Stir in oil or shortening for a smooth consistency.
  6. Carefully spread candy melts over top of a cereal treat with small metal spatula.
  7. Immediately add black fondant pot to the bottom of cereal treat. Add gold confetti sprinkles to the top of the pot to mimic gold. Use a toothpick to move any sprinkles if necessary.
  8. Add mini rainbow sour belts at an angle to the top.
  9. Set aside on baking sheet to dry completely at room temperature. Repeat with remaining cereal treats.
  10. Set aside to dry at room temperature.
  11. If you would like them on a stick, cut paper straws in half and insert them into the bottom of the cereal treat so they reach halfway up.
  12. Store in airtight container until ready to serve.
