
In a large pot sauté onion and garlic until soften and translucent over medium heat. Add broth, potatoes, salt and pepper. Boil over medium heat until potatoes are tender, approximately 10 to 15 mins, depending on size.
Gently smash half of the potatoes with a potato masher, or large spoon to thicken soup.
Can include other favorite baked potato toppings such as chives, sour cream or jalapenos.
