This easy Potsticker Soup is a flavorful dumpling soup made with frozen potstickers, mushrooms, ginger, garlic, and green onions. It's an easy weeknight dinner ready in just 30 minutes that's comforting, satisfying, and full of savory Asian inspired flavor!

Ingredients

  • 24 ounces fully cooked frozen chicken or pork potstickers
  • 1 ½ tablespoons olive oil divided
  • 8 ounces sliced baby bella mushrooms (or shiitake mushrooms)
  • 3 garlic cloves minced
  • ½ tablespoon freshly grated ginger
  • 6 cups chicken broth
  • 2 cups water
  • ¼ cup soy sauce
  • 1 tablespoon fish sauce
  • 2 tablespoons toasted sesame oil
  • 6 green onions sliced and divided
  • 3 ounces enoki mushrooms ends trimmed (optional)
  • black pepper to taste

Instructions

  1. Heat 1 tablespoon olive oil in a large pot over medium-high heat. Add the baby bella mushrooms and sauté for 4–6 minutes, or until golden brown.

  2. Add the remaining ½ tablespoon olive oil, garlic, and ginger. Sauté for about 1 minute, stirring frequently, until fragrant.

  3. Add the chicken broth, water, soy sauce, fish sauce, and toasted sesame oil. Bring to a boil. Taste the broth and season with salt and pepper as needed.

  4. Reduce the heat to a simmer. Add the frozen potstickers and two-thirds of the sliced green onions. Simmer for 3 minutes.

  5. If using, add the enoki mushrooms and cook for 1–2 minutes more, or until the potstickers are heated through and the mushrooms are tender.

  6. Serve immediately with remaining green onions for garnish.

Recipe Notes

Store leftover soup in an airtight container in the refrigerator for 3–4 days.

Tip: To reduce the sodium, consider using a reduced-sodium chicken broth and low-sodium soy sauce. 

Want additional add-ins or something other than mushrooms? Here are some options:

  • Napa cabbage or shredded cabbage:  Use about 2–3 cups chopped or shredded and add it to the broth for several minutes before the potstickers.
  • Baby spinach: Add about 3–4 cups during the final 1–2 minutes.
  • Bok choy: Add 2–3 cups chopped bok choy. Add the stems with the potstickers and the leafy portions during the last couple of minutes of cooking.
