Pumpkin Muffins with Cake Mix
Craving pumpkin muffins? Any time is a good time to whip up these simple and delicious pumpkin muffins with cake mix, canned pumpkin and pumpkin pie spice. Just three ingredients are needed to make these easy muffins anytime. No eggs, dairy or oil required!

yellow cake mix

can (15 oz)
pumpkin puree
(not pumpkin pie filling)
1 1/2
teaspoons
pumpkin pie spice
Preheat oven to 350 degrees Fahrenheit (175 degrees C). Line a muffin tin with paper liners or spray with cooking spray to grease.
In a large bowl, mix cake mix, canned pumpkin and pumpkin pie spice until fully combined and smooth. (The batter will be very thick.)
Divide batter equally into 12 muffin cups. Flatten batter slightly using the back of a spoon to level.
Bake in the preheated oven until a toothpick inserted in the center comes out clean approximately 20 to 25 minutes.
Cool in pan for a few minutes before transferring to a wire rack to cool completely.
Store in an airtight container.
*Can substitute spice cake mix and omit pumpkin pie spice to make this a 2 ingredient recipe.
