Ingredients

  • 9 inch prepared pie shell

Filling:

  • 1 cup sugar
  • 2 tablespoons flour
  • 1 egg
  • ½ teaspoon vanilla
  • 2 cups sliced fresh rhubarb

Topping:

  • ¾ cups flour
  • ½ cup brown sugar
  • ½ cup rolled oats
  • 1/3 cup cold butter

Instructions

  1. Preheat oven to 350 degrees Fahrenheit
  2. Place pie shell into 9 inch pie plate.
  3. In medium bowl beat sugar, 2 tablespoons flour, egg and vanilla.

  4. Stir in rhubarb.
  5. Pour into unbaked pie shell.
  6. In a small bowl, mix together the flour and brown sugar. Add the cold butter and use a fork or pastry blender to work the mixture into coarse crumbs. (For easier mixing, cut butter into smaller chunks.)
  7. Sprinkle crumble topping evenly over rhubarb pie.

  8. Place pie on a baking sheet just in case it bubbles over. Bake in preheated oven for one hour, until the filling is bubbling and the topping is golden brown.
  9. Cool pie on wire rack before slicing.
  10. Serve as is or top with vanilla ice cream or whipping cream.
