Ingredients

  • 8 oz package cream cheese softened
  • 1 tablespoon ranch seasoning mix (Hidden Valley Ranch)*
  • 1/4 cup sour cream
  • 2 cups shredded pepper jack cheese (or Monterey jack, cheddar or Mexican blend)
  • 6 slices bacon precooked and crumbled
  • 3 green onions finely chopped (or 3 tablespoons fresh parsley or fresh chives )
  • 6 oz prosciutto
  • your favorite spooky crackers, meats, cheeses, nuts, veggies, fruits or candy

Instructions

  1. Beat softened cream cheese in medium bowl with mixer until creamy.

  2. Mix in ranch seasoning and sour cream until fully combined.

  3. Stir in shredded cheese, bacon, and green onion. Set aside.

  4. Spray silicone skull mold with cooking spray and use a pastry brush to spread evenly.

  5. Layer prosciutto over the bottom of the skull face mold. Fill with cheese ball mixture and use an offset spatula to spread evenly.

  6. Fold up sides of prosciutto. Place additional prosciutto over the back so the entire cheese ball is covered with a layer of the meat. Press down into the mold evenly and gently with some plastic wrap.

  7. Cover with plastic wrap and place mold on a small baking sheet. Place in the fridge and chill until firm. (I chilled a full 24 hours.)

  8. Before serving, remove plastic wrap and place a cheese board or wooden board on the back of the mold and flip over. It should release immediately.

  9. Arrange your favorite meats, cheese, veggies, nuts and fruits around the skull cheese ball to create a spooky charcuterie board.

  10. Cover and refrigerate any leftovers for up to 5 days.

Recipe Notes

*This recipe does not use the entire 1 oz packet of Hidden Valley Ranch seasoning mix, which is approximately two tablespoons total. French onion mix can also be substituted.
