A refreshing and healthy snack for any patriotic holiday or summer gathering!
Using a large melon baller or cookie scoop, make 18 large watermelon balls. Set aside.
To assemble fruit skewers, add two blueberries, then one mozzarella ball and one watermelon ball. If you'd like to display your skewers standing up, be sure to place the flat side of the the watermelon ball down. (If your fruit skewers are longer, you can add additional fruit if desired.)
Repeat with remaining ingredients. Serve immediately or transfer to an airtight container and chill.
Right before serving, drizzle with balsamic glaze, if desired.
Best if consumed within 1 to 2 days.
For this recipe, a 6 oz. package of BelGioioso Fresh Mozzarella Snacking Cheese was used but an 8 oz package of BelGioioso Fresh Mozzarella Pearls would also work.
You can substitute cherry tomatoes or a strawberry for the watermelon.
Exact amount of watermelon needed will depend upon the size of your scoop or baller and the size of your seedless watermelon.
