Ingredients

  • 1 1/2 pounds baby red potatoes
  • 1 1/2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground pepper
  • fresh parsley for garnish optional

Instructions

  1. Preheat air fryer to 400 degrees Fahrenheit.
  2. In small bowl, mix together garlic powder, paprika, Italian seasoning, onion powder, salt and pepper. Set aside.
  3. Cut red potatoes in half or into wedges, depending upon size. (Try to keep potatoes bite size and relatively even). Place potatoes in a large mixing bowl.
  4. Drizzle olive oil over potatoes and sprinkle seasoning mixture over the top. Toss potatoes to evenly coat.
  5. Place potatoes in an even layer in air fryer basket.
  6. Cook for 14 to 20 minutes or more or until potatoes are golden brown and tender. Shake the basket at least two to three times for more even browning.
  7. Serve immediately, garnishing with chopped fresh parsley, if desired.

Exact cooking time will vary depending upon the air fryer used and potato size.

Oven instructions:  I recommend increasing the olive oil to 2 tablespoons and placing the potatoes in a single layer on a large baking sheet. Bake at 425 degrees Fahrenheit for 20 to 25 minutes or until tender and golden brown.
