Caramel Apple Pumpkin Pie

Ingredients

  • 1 1/2 cups chopped peeled apples 2 small
  • 1 cup all-purpose flour
  • 3/4 cup packed brown sugar
  • 1/4 cup butter softened
  • 1/2 teaspoon pumpkin pie spice
  • 1/3 cup chopped walnuts
  • 1 cup canned pumpkin
  • 1/3 cup granulated sugar
  • 1/4 cup milk
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon pumpkin pie spice
  • 1 egg
  • ice cream
  • caramel sauce

Instructions

  1. Heat oven to 350°F.
  2. Add apples to 9-inch ungreased glass pie plate. Spread evenly.
  3. Microwave uncovered on High 3 to 4 minutes. (Apples should be crisp tender, not soggy)
  4. In small bowl add 3/4 cup flour, brown sugar, butter and 1/2 teaspoon pumpkin pie spice. Mix with fork until nice and crumbly.
  5. Stir in walnuts. Set aside.
  6. In medium bowl, whisk remaining ingredients except ice cream and caramel until well blended.
  7. Pour over apples.
  8. Sprinkle crumb mixture over top.
  9. Bake 30 to 35 minutes or until golden brown and fully set.
  10. Cool at least 20 minutes.
  11. Serve warm with ice cream and caramel.(Also tastes great cold.)
  12. Refrigerate leftovers.
