Easy Spring Appetizer with Veggie Flowers

Ingredients

  • 40 RITZ Crackers
  • 1 package 8 oz cream cheese, softened
  • 3 medium to large peppers such as yellow red and orange
  • 1/3 cup finely shredded carrot
  • 1 tablespoon finely chopped fresh parsley
  • 1 tablespoon finely chopped fresh chives
  • fresh parsley for garnish
  • fresh chives for garnish

Instructions

  1. Using small metal cutters, create flower shapes from yellow, red and orange peppers.
  2. Set aside.
  3. In small bowl, beat softened cream cheese.
  4. Finely dice excess fresh peppers to create 1/3 cup.
  5. Add diced peppers, carrot, parsley and chives to cream cheese. Beat until well combined.
  6. Top crackers with cream cheese.
  7. Using veggie cutouts, fresh chives and parsley, create flowers on top.
  8. Serve immediately.
