Funfetti No Bake Cheesecake Bites (Viral Dot Cake Inspired Dessert)

Ingredients
- 1 8 oz cream cheese softened
- 1/4 cup butter softened
- 2 cups Funfetti cake mix*
- ½ cup powdered sugar
- ¾ cup nonpareils sprinkles for coating
- additional sprinkles for cake mix optional, up to 1/2 cup
Instructions
Heat Treat Cake Mix

Place the cake mix in a microwave-safe bowl and microwave for 1 minute, stirring halfway through. Let the cake mix cool completely before using.
Make Cheesecake Mixture

In a large mixing bowl, add the softened cream cheese, softened butter, cooled cake mix, powdered sugar plus any additional desired rainbow sprinkles. *

Using a hand mixer or stand mixer, beat on high speed until fully combined and smooth. (The mixture may look crumbly to start, but continue mixing and it will come together.)

Cover the bowl and refrigerate for 1 hour, or until the mixture is firm enough to scoop and roll.
Make Cheesecake Bites

Add sprinkles to a small bowl.

Use a cookie scoop to portion the mixture into even-sized balls. Roll each portion between your hands until smooth.

Immediately roll the cheesecake balls in nonpareils.

Place the cheesecake balls back in the refrigerator until ready to serve, at least 30 minutes.
Recipe Notes
- *You will have leftover cake mix. This does not use a whole box.
- You can add up to 1/2 cup extra of rainbow sprinkles to the batter or you can just use what is included in the cake mix.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- These are best served chilled.
- Freeze them for longer storage and thaw in the refrigerator before serving.
