One bite and it’s easy to see why sprinkle desserts are having their moment.

I’ve always loved sprinkle desserts because they instantly add a bright, colorful touch to anything sweet. Over the years, I’ve used them in everything from jumbo sprinkle marshmallows to rainbow unicorn cups to chocolate covered blueberries. While they’re perfect for special occasions, I also think sprinkles deserve a place in everyday treats. After all, what’s stopping you from making chocolate dipped cones with sprinkles to cool down on a summer day?
Viral Dot Cake Inspired Dessert
Have you seen the viral Dot Cakes from Alexandra (“Alex”) Posner and her mother, Sondra Posner of The Dotcakes? While this New York bakery has been creating cakes covered in colorful nonpareils for years, the recent launch of the Dotcup—a portable, single serving version of their signature cake—and a partnership with the upscale New York grocery store Butterfield Market helped spark a social media frenzy. The result? A wildly popular TikTok trend that has dessert lovers everywhere obsessed with colorful nonpareil covered treats.

But why stop at cake? Just as the Dotcup transformed a full-sized cake into an easy grab and go dessert, these Funfetti No-Bake Cheesecake Bites from Jamie Lea take the same playful, sprinkle covered inspiration and turn it into a simple, bite sized treat. They’re easier to make than a traditional cheesecake and perfect for parties, holidays, or anytime you’re craving something sweet and fun.

Cheesecake Bites Recipe Ingredients
Just a few simple ingredients are needed to make these cheesecake bites.
- Funfetti cake mix
- cream cheese
- butter
- powdered sugar
- nonpareil sprinkles
To make this recipe, you will not be preparing the cake mix as instructed on the box so you won’t need any eggs or water. This recipe also does not use the entire funfetti cake mix. Please scroll down for some fun ideas for using the rest of your cake mix.

How to Make Cheesecake Balls
To make these no-bake cheesecake bites is pretty straight forward. To start, you’ll want to heat treat your cake mix to kill any potential bacteria, just to be safe.
Place the cake mix in a microwave-safe bowl and microwave for 1 minute, stirring halfway through. Let the cake mix cool completely before using.

In a large mixing bowl, add the softened cream cheese, softened butter, cooled cake mix, powdered sugar plus any additional desired rainbow sprinkles.

Using a hand mixer or stand mixer, beat on high speed until fully combined and smooth. (The mixture may look crumbly to start, but continue mixing and it will come together.) Cover the bowl and refrigerate for 1 hour, or until the mixture is firm enough to scoop and roll.

Add sprinkles to a small bowl. Use a cookie scoop to portion the mixture into even-sized balls. Roll each portion between your hands until smooth.

Immediately roll the cheesecake balls in nonpareils.

Place the cheesecake balls back in the refrigerator until ready to serve, at least 30 minutes. That’s it!
Kitchen Notes
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- These are best served chilled.
- Freeze them for longer storage and thaw in the refrigerator before serving.
