Ingredients

  • 1 and 1 /2 cups Bisquick Pancake and Baking Mix
  • 1/2 cup old fashioned oats
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup butter softened
  • 1 cup brown sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1 cup raisins or chocolate chips

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In medium bowl, stir together pancake mix, oatmeal, cinnamon and nutmeg. Set aside.
  3. Using a mixer, beat butter and sugar in large bowl until light and fluffy.
  4. Mix in egg and vanilla.
  5. Add in pancake mixture mixture and mix until fully combined.
  6. Stir in raisins or chocolate chips.
  7. Line a cookie sheet with a silicone baking mat or parchment paper.  Drop batter by tablespoons.

  8. Using bottom of glass, flatten each cookie slightly.
  9. Bake for 9 to 11 minutes or until edges are lightly brown.
  10. Cool for 2 minutes before transferring to a wire rack.
