Calling all taco lovers! This taco casserole is a great change of pace from the usual taco night. Layered seasoned ground beef with Doritos and shredded cheese, this casserole recipe is sure to be a hit with the whole family. Finish off your walking taco casserole with your favorite taco toppings such as shredded lettuce, diced tomatoes, green onions, and sour cream!

Taco Casserole

Taco casserole is the perfect dinner for taco lovers! A ground beef mixture loaded with flavor is layered with shredded cheese, Doritos or Fritos and plenty of shredded cheese for the ultimate walking taco casserole! Serve with your favorite toppings such as shredded lettuce, diced tomatoes, green onions and sour cream. So good, you have to try it!

Ingredients

  • 2 pounds lean ground beef (I used 85/15)
  • 1 small yellow onion diced (approximately 1 cup)
  • 1 envelope (1.25 oz) taco seasoning mix
  • 1 can (10 oz) Rotel diced tomatoes and green chilies undrained
  • 1 can (15.5 oz) chili beans undrained
  • 1 can (15.5oz) black beans drained and rinsed
  • 1/2 brick (4oz) cream cheese cubed (for quicker melting)
  • 4 cups Doritos Nacho Cheese Flavor (or Fritos or tortilla chips), approximately 2 cups crushed
  • 1 block (8 oz) cheddar cheese shredded (2 cups) or Monterey Jack, Colby-Jack, Pepper Jack or Mexican cheese blend
  • optional toppings: shredded lettuce, diced tomatoes, additional shredded cheese, sour cream, chopped green onion, sliced black olives, salsa, guacamole, cilantro, jalapeno

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. In a large skillet, brown ground beef and onion until fully cooked over medium high heat. * Drain grease.

  2. Reduce heat to medium. Gently stir in taco seasoning, Rotel (undrained), chili beans (undrained) black beans (drained and rinsed) and cream cheese. Stir until full combined and cream cheese is completely melted.

  3. Spray a large casserole dish (3 quart) or 9x13 inch baking dish with non-stick cooking spray. Crush half the Doritos and sprinkle evenly over the bottom of the pan. Add in half the the ground beef mixture. Top with half the shredded cheese.

  4. Spoon remaining ground beef mixture over the top. Sprinkle with remaining crushed chips and shredded cheese.

  5. Bake for 15-20 minutes uncovered until chips start to brown and cheese has fully melted and is bubbly.

  6. Top with shredded lettuce, diced tomatoes, green onion and sour cream if desired or serve with your favorite taco toppings on the side.

  7. To store, cool completely and store leftovers in an airtight container for up to 3-4 days.

This casserole is not spicy if you use mild Rotel. If you like more spice, you can up the spice in a variety of ways including:

  • Use Hot Rotel instead of Original Rotel or Mild Rotel
  • Add a can of diced jalapeno or green chilies or top with your favorite hot peppers
  • Top with your favorite hot sauce or hot salsa
