Easy Caesar Chicken Wraps for Lunch

With back to school in full swing, I like easy recipes for breakfast and lunch for both my kids and myself! The mornings are typically a rush, so I try to keep things as simple and seamless as possible. My boys absolutely love cereal loaded with milk and topped with banana, so that is a typical breakfast. I happen to love greek yogurt in the mornings. I like that it is quick and allows me to sit at my laptop and get some work done after my older boys head off to school. Even better, it has a whopping 11 grams of protein in a single serving to keep me going all morning long. For lunch, I like to mix it up when I can like with these easy Caesar Chicken Wraps.

Easy Chicken Caesar WrapThese caesar salad chicken wraps are a great way to get some protein. I use leftover chicken, romaine lettuce, caesar dressing and parmesan cheese to create a salad that is easy to eat. You can even add in croutons if you like some crunch like I do. It takes me five minutes to prepare four small wraps or two large wraps, whichever you prefer.

Caesar Chicken Wraps

Ingredients

  • 4 6 inch small flour tortillas
  • 2/3 cup leftover chicken breast cubed
  • 1 cup romaine lettuce
  • 2 tabespoons Caesar dressing
  • 1 tablespoon Parmesan cheese with the REAL® Seal
  • 2/3 cup croutons
  • cracked pepper to taste

Instructions

  1. In medium bowl, mix together chicken, lettuce, dressing, cheese and pepper until well incorporated.
  2. Gently stir in croutons.
  3. Divide salad mixture among four tortillas. Wrap up bottoms, then sides and secure with toothpick.
  4. Serve immediately or refrigerate.

  5. I have never thought about making these chicken wraps at home before and have eaten them at restaurants many times. The recipe is so simple that I am going to have to make these at home and save a lot of money.
