Chicken Potato Fiesta Bake with Betty Crocker {Recipe & $50 VISA GC Giveaway} CLOSED

If there is one thing I love to cook for my family, it is a recipe which allows me to use very few dishes and can be put together in a matter of minutes. This recipe is inspired by the Potatoes and Chicken Fiesta from Betty Crocker but with a few twists tailored to my tastes.By using Betty Crocker Cheesy Scalloped Potatoes and leftover fried chicken I had a simple one dish meal that I loved! (This would also taste fantastic with some of those turkey leftovers!)

Chicken Potato Fiesta Casserole

Ingredients

  • 1 box 5 oz Betty Crocker® cheesy scalloped potatoes
  • 2 1/4 cups boiling water
  • 3/4 cup milk
  • 2/3 cup shredded taco cheese or your other favorite cheese combination
  • 1/3 cup Old El Paso® Thick 'n Chunky salsa
  • 2 cups cooked chicken broken up (leftover rotisserie or fried chicken works well)
  • sour cream and diced green onion for garnish optional

Instructions

  1. Preheat oven to 400º F.
  2. Whisk sauce mix and boiling water in 2-quart casserole until sauce mix is melted.
  3. Whisk in milk
  4. Stir in potatoes and remaining ingredients.
  5. Bake uncovered approximately 35 minutes or until potatoes are tender.
  6. Let stand 5 minutes before serving as the sauce will thicken as it stands.
  7. Top with sour cream and green onion (if desired).

I used taco cheese for extra zip but you can use any combination of cheeses you like. Monterey jack, cheddar and pepper jack would also taste great! To change the temperature of this dish consider using medium or hot salsa as opposed to mild.

Try different toppings on top such as lettuce, tomatoes and more! Anything that would traditionally taste good on enchiladas would taste great on this dish!
