Cucumber Radish Salad with Creamy Dill Dressing

Cucumber radish salad is a refreshing side dish option. This recipe features fresh cucumbers, radishes and onion tossed in a creamy dill dressing that is tangy and full of flavor. If you love creamy cucumber salad, you’ll love this salad with radishes added.
This cucumber radish and onion salad is the perfect side dish for cookouts, dinner parties, or any summertime get-together. It’s refreshing and flavorful, with a subtle dill flavor that pairs perfectly with the crispness of the cucumbers and radishes. This salad is very versatile and tastes great served with grilled chicken, fish, pork or steak. Cucumber Radish Salad Ingredients
To make this delicious cucumber and radish salad, you’ll need the following ingredients:
- English cucumber
- red onion
- radishes
- mayo
- sour cream
- red wine vinegar
- sugar
- fresh lemon juice
- dried dill weed or fresh dill
- garlic powder
- freshly ground pepper
- sea salt
If you have traditional cucumbers, I recommend using two cucumbers and peeling them for this salad. You can also use white vinegar if you don’t have red wine vinegar on hand. If you aren’t a fan of sour cream or don’t have any available, you can use all mayo in a pinch, although I prefer this salad with the sour cream.
How to Make Radish Cucumber Salad
Cut cucumbers into thin, even slices. Cut red onion into thin slices and cut those slices in half.
How to Salt Cucumbers Before Making Salad
Add cucumbers and onion to large sieve and place over a bowl. Sprinkle salt over the top and stir well. Cover with plastic wrap and let sit for at least 30 minutes, stirring once halfway to get excess moisture out of cucumbers.
Meanwhile, trim and slice radishes thinly using a knife or mandolin. Add to large bowl. Set aside.
For this job, I highly recommend a mandolin for even slices and to make this step quicker. However, if you’ve ever worked with one before, you know they are both amazing for fast, thin and even slices but also pretty dangerous. Consider cut resistant gloves if you use one to avoid any mishaps in the kitchen. A slice from a mandolin can do quite a bit of damage to your fingers.
In medium bowl, whisk together remaining ingredients (mayo, sour cream, red wine vinegar, sugar, fresh lemon juice, dill, garlic powder and fresh ground pepper). Set aside.
Turn over cucumbers and onion onto paper towel and pat dry well with paper towels to remove excess liquid.
Add cucumbers and onion to radishes. Pour dressing over top. Gently stir until well combined. Cover and refrigerate.
How long does Cucumber Salad last?
Ideally serve within one to two hours. For best results, eat with 24 hours. How long this salad will last depends upon personal preferences. My husband and I still enjoy this salad for one to two days after making it, but the dressing certainly changes over that time and becomes thinner.
Can you skip salting cucumbers before making salad?
Short on time? You can absolutely skip the step of salting the cucumbers before making this salad. However, the salad will break down and get watery faster without this step. If you go this route, I highly recommend making the dressing ahead to time to give those flavors a chance to meld. Mix the salad together right before serving. It will still be creamy and delicious, however any leftovers won’t last as long.

Recipe Notes
*If you want to skip the step of getting some the water out of the cucumbers, I recommend cutting your vegetables and making your dressing ahead of time to let the flavors meld and then pouring the dressing over the vegetables just before serving.
**Cucumbers continue to release water as they sit in the dressing. Over time the dressing will thin out. It will still taste good but will get very watery so best to consume this salad within a day or within an hour if you like a very creamy dressing.
