Lemon Cool Whip Cookies

Lemon Cool Whip Cookies are a soft, cake cookie that looks beautiful on any cookie tray! Using a cake mix as a base, these simple lemon cookies are chewy and delicious! Serve them up any time of year for holidays, celebrations or just to surprise your family.
Add these lemon cake mix cookies for to your baking list. Doesn’t really matter the holiday. It could be for your Christmas cookie tray, Easter dessert, or really just because you feel like a tasty cookie. No reason needed to celebrate with some cookies, am I right? Lemon is one of my favorite cookie flavors. Have you ever tried lemon ricotta cookies? So light and tangy!
My husband is a sucker for a cake cookie. Can’t say I blame him. And these soft, chewy cookies are light and flavorful. He really had a hard time keeping his hands off them. If you love traditional lemon cookies or cake cookies, then this recipe is for you! (The cake mix as the base is probably a dead giveaway that they are cake-like.) You can do so much with a cake mix. Lemon Crinkle Cookies Ingredients
To make these cake mix cool whip cookies, you’ll need the following ingredients:
- COOL WHIP Original Whipped Topping
- 2 eggs
- lemon cake mix (15.5. oz)
- flour
- fresh lemon juice
- lemon zest
- powdered sugar
Most Cool Whip cookies skip the added flour and just use the cake mix. However, adding a little extra flour helps with reducing the amount this cookie spreads and keeps it fluffy. This is a personal preference and how I make them but you can also skip the extra flour if preferred.
How to Make Lemon Cool Whip Cookies
Now let’s get to making these tasty cookies! You’ll want to the beat the thawed whipped topping and eggs until well combined. Stir in cake mix, flour, lemon juice, and lemon zest. Dough will be thick and very sticky. Chill for 1 to 2 hours to reduce stickiness. You can skip the chilling but I highly recommend this step!
Preheat your oven to 350 degrees Fahrenheit. Line a baking sheet with a silicone baking mat or parchment paper. Using a cookie scoop (or two spoons), drop teaspoons into a small bowl of powdered sugar. Roll to coat, avoiding touching the dough with your hands.
It is crucial to not touch this dough because it is very sticky. Trust me. You don’t need a perfectly shaped ball in order to get a round cookie with this dough. However, you can shape it a bit if you like as I did. Just know you’ll see less powdered sugar on the outside. If you want a more prominent crinkle you’ll want to skip shaping it at all.
Place on baking sheet and bake for 10 to 12 minutes until lightly browned and tops are cracked. It is very important that you cook them long enough so they puff up nicely in the center. Otherwise they can still taste a bit doughy, instead of like cake. Let the cookies cool on the cookie sheet for two minutes before transferring to wire rack to cool completely. Store in air tight container.
Can You Freeze Cake Mix Cool Whip Cookies?
Wondering if these Cool Whip cookies freeze well? The answer is yes! Best to place parchment paper in between however to avoid any sticking.
You’ll find that the center of these lemon cookies with cake mix and Cool Whip are nice and fluffy. Just the way we like them!
